So me and Melanie went on a baking spree this weekend and I just had to share with you this amazing recipe!!
They taste like a complete treat, they even look like a treat… Actually, they look like they would definitely be healthy and that’s because they are!! It’s such a quick, simple and easy recipe and good for Mom’s on the go who want to stay healthy, or for giving to the little ones so they’re not reaching for the naughty kind. They are packed with nutrients and will keep you fuller for longer, making them great for any weight loss journey!
Being quick and easy is a definite favourite for why I always go to these little muffins of heaven. But also because they are so versatile! You could have them as a snack, served with a bit of yoghurt as a desert, or best yet you can even grab a couple of the go for breakfast! You’ll never get bored of them either. You can mix and match the flavours as you please. For today’s recipe (and because I made them like this the other day) I made them with cherries. But you can put any fruit in you like! I have even mixed in some of my favourite chocolate protein powder before now for an extra treat.
- 180 grams of oats
- 2 bananas
- 2 eggs (or 1 cup of apple sauce to make it vegan)
- 2 tsp of vanilla
- 2 tsp baking powder
- Cherries or fruit of choice
- 1 scoop of JP Vanilla or Chocolate protein powder (optional)
- Preheat the oven to 190.
- Grease up your muffin tray with some melted coconut oil. Or line with muffin cases.
- Add all the ingredients in a bowl mashing the bananas and combine well together.
- Divide the mixture evenly into the muffin tray.
- Cook for 18 minutes.
- Take out and allow to cool before eating!
Store in a container in the fridge, or for longer keeping, wrap them up and can be frozen for 3 months! But we find they are gone by the second day in our house!
